Chilli Beef / Pork Sauce with Noodles

Serves 4-6


Method

Heat a wok or large frying pan over a medium/ high heat and add the oil

Stir-fry spring onion, garlic and ginger for 1 minute.

Add pork or beef and stir-fry for a further 2 minutes, breaking up any lumps in the meat

Add chilli bean sauce, soy sauce, rice wine, hoisin sauce, salt and sugar, mix well

Reduce heat to medium and cook for 10-15 minutes until the meat is just cooked - serve immediately

Serve simply over cooked noodles

Ingredients

2tbsps groundnut oil (or vegetable oil)

2tbsps finely chopped garlic

3tbsps finely chopped spring onions

2tbsps finely minced root ginger

1lb lean minced beef or pork

1tsp-2tsps chilli bean sauce (or chilli powder) to taste

1tbsp dark soy sauce

2tbsps rice wine (or dry sherry)

2tbsps hoisin sauce

pinch of sea salt

3 tsps of sugar

 4-6 portions of cooked noodles
