Serves 4-5
In a large heavy-bottomed pan, fry the beef and onion until brown
Add the carrots and parsnips and fry for a few minutes
Add the potatoes and beef stock
Pour in enough hot water to cover all the ingredients
Add the oregano, bay leaves, bouquet garni and red pepper
Cover and simmer for 2-3 hours
Before serving, mix the Bisto powder with a small amount of water to create a paste, then stir into the stew to thicken.
Serve with crusty bread
500g stewing steak or boneless shin, cubed
1 large onion
5 large potatoes, peeled and cubed
4 large carrots, sliced
2 parsnips, sliced
1 bouquet garni
2 bay leaves
1 tbsp oregano
1 cup beef stock
1 red pepper, chopped
2 tbsp Bisto powder
